Wine 1 – GOURMAN CHAMPAGNE, ON FRUIT
Area : Maison Dehours (Jérôme Dehours since 1996, 4th generation)
Name: Champagne
Terror : Vallée de la Marne (15 km from Epernay) southwest of Reims. Left bank.
Terrors made of clays and sands laid on limestone mother rocks.
Grape(s): Pinot millier (60%), supplemented by 25% chardonnay and 15% pinot black
Cuvée: Grande Réserve (principal cuvée of the estate, takes its name from the high proportion of wine in reserve)
Vintage: non-millennial (perpetual reserve started in 1998 = solera)

Description : It is a low-dose cuvée (less than 7 grams/litre), a dosage representative of the philosophy of the house, which offers a beautiful expression and a great generosity in its aromas. Maturation 15 to 27 months in bottle.
Pinot Meunier : an identity grape from the Marne valley
Eye : Golden dress with carmine reflections. The bubble is very thin, dynamic.
Nose : Complex, gives off aromas of flowers, honey, moka and white fleshy fruits. Nice grilled and buttered character.
Mouth : Nette, presents a successful marriage between freshness and maturity. The dosage is right, it magnifies the finesse and elegance of this champagne. There is a nice persistence with a fresh and gourmet finish.

WINE N°2 – THE WINE OF SOIRE
Area : Domaine de Bellivière (Éric Nicolas)
Name: Jasnières (Loire)
The vineyard of Jasnières is the only winery located in the Sarthe department. Located along the Loir, famous sub-tributary of the Loire, and west of Vendôme, Jasnières is the northernmost name of the Loire Valley.
Éric and Christine Nicolas are the founders of the Domaine de Bellivière, which counts in the panorama of Loire wines, and not only for the quality of their gourmet wines with controlled sugars. On two unknown appellations of the general public, Jasnières and Coteaux-du-Loir, the couple creates the domain of all pieces in 1995, first by rehabilitating an old farm body, then, little by little, by bringing together about twenty hectares of vines in five communes. In organic since 2005, the whole vineyard is certified in Biodynamics in 2011.
In the cellar: natural vinification, work by gravity, breeding in caves troglodytes...
Joined the Domaine by their son Clement since 2015, Bellivière's future is in good hands. The praises are deserved, the wines are of implacable accuracy.

Tasting : one is actually in the poetic register, endless length, true greedy, with 2,72 grams of residual sugars / liter. Powerful bitters.

WINE N°3 – WINE OF COPAIN BY EXCELLENCE
Area : Land of Ocre
Name: VdF Auvergne
Located in the heart of the appellation Saint-Pourçain on the communes of Châtel de Neuvre and Meillar, the estate extends over 9.5 hectares of vines, dividing into 3.30 hectares of white vines with the Trésailler and Chardonnay and 6.20 hectares in red with the Gamay and Pinot noir. Very quickly, Florent's talent and the fruit of his work are recognized.

Wine #4 : Tasty, spicy and fresh!
Name: Bandol
Area : Promised Lands
Terror : At 400 meters above sea level, on a dolomitic limestone terroir of the upper Jurassic, about 30 kilometers from the Mediterranean.
This 13 hectare estate, created by Jean-Christophe Comor on the foothills of the Sainte-Baume massif, is worked in organic. The wines are very little sulphur and, of course, the yeasts industrial or acid are banned from the cellar.
This former Parisian, professor at Sciences Po, has, in a few years, succeeded in his bet and elaborates wines of character, solar, elegant and complex with a style that refines with vintages. A reference to be followed closely.

Description : It's a Raced bandol with velvety tannins and persistent fruit notes. A warm southern wine (but that keeps freshness) = paradox!
A form of graphite minerality (the pebbles still the pebbles) is notable in the final, it will marry perfectly with nicely peppered beef, or a chicken.
After good ventilation, pure pleasure!!
Nose : Black and red fruit, spicy. Notes of ripe fruit, spices, a touch of leather and a subtle woody well integrated.
Tasting : Velouté and all in finesse despite its tempered character.

Wine #5 : The sun in bottle
Area : Cazes
Name: Rivesaltes (AOP Roussillon)
Founded in 1895 by Michel Cazes in the province of Roussillon. Located at the foot of the Corbières foothills, in the Agly Valley. The soils, predominantly argilo-calcary, are dotted with shale debris and siliceous pebbles, an association that is remarkably conducive to the production of great wines.
More than 220 hectares, fully converted into organic and biodynamic farming.

Description : This natural sweet wine is raised fifteen years old in old French oak lightnings. Made with 100% Black Grenache, its roasted and cocoay notes blend perfectly with powerful Munster or Maroilles cheeses, and chocolate and coffee pastries.
Nose : Powerful, complex nose, roasted aromas, nuts, caramel, cocoa.
Tasting : The palate develops a broad and sweet flesh, covered with flavors of coffee, roasting and plum.
