Wine n°1 : Natural sparkling of Domaine Pech del Cel

Area : Pech del Cel (vigneron Greg & Laure Aurel since 2011) – 4 Ha

cultivation in organic, manual harvests, native yeasts and minimal inputs.

Name: Gaillac (calcareous land)

The Gaillac vineyard is located 50 km east of Toulouse, in the north of the Tarn department. It is one of the oldest vineyards in France that covers about 4,000 hectares.

In Gaillac, there is a word that often comes back when we talk about the vineyard: diversity. And the range of wines does not deviate from the rule by offering us an exceptional palette of richness (effervescent, dry, white, red, veils, mellow).

Anecdote on the domain : Mythic night bird, the owl shows a great sense of observation in all situations. It is discreet and intuitive, and accompanies the winemaker in the long evenings of vinification. Beyond any symbolic which can adapt to the work of natural wines, La Chouette du Pech Del This refers to the village of Cahuzac sur Vère ; We find her on her coat of arms.

In Patois, an owl = a Cahu = Cahuzac on Vère

= far from the bud/vine variety endemic to Gaillac (returns to fashion, hyper versatile)

Description : Duras gives the color a little fushia

The ancestral method: Once winter arrives, the cold ends the first alcoholic fermentation. The latter is stopped in its momentum by the drop in temperature. Then the juice is bottled directly. The future keel of pet nat will then rest and when the sun returns to the sunny days, the fermentation will resume. That's how the bubbles will be born. It simply remains to remove the deposit present in the wine and the trick is played!

Nose : Pears, Fermentary notes, floral

Tasting : nice acidity and light bitterness in the finish

Wine n°2 : A white Corbières not like the others

Area : Les Abrigans (Laura Lees and Arthur Joly) – first cuvée in 2017

Name: French Wine – Corbières

Neo-winners, they embarked on the adventure of reviving an abandoned vineyard in the Corbières for 6 years... A little over eight hectares, a crazy job (collective job etc.). 1112 bottles on 8 hectares after two years of hard work, let's just say we're talking about nectar!

Our first objective is to find a coherent and respectful human relationship. That's why we don't touch the ground.

They now work about ten hectares around Villeneuve les Corbières, of which a small part of the original vines. No chemistry, no input, and juices of great purity.

Description : Mature, very open profile, structure, radiance, a confusing salinity. A lot of freshness in the palate, there is a beautiful acid ridge that keeps the wine to the end.

Remarkable white garnish white and grey in direct pressing, fine and elegant, complex and fresh.

Nose : Riesling side with oily notes, complexity, minerality, gunstone.

Tasting : Mature, salinity, lots of freshness in the mouth.

Food & Wine Agreement : Gastronomy wine with more complexity and fat.

Wine No. 3: Light red, boyfriend wine par excellence

Area : Clos de la Barthassade (village of Aniane next to the famous Grange of the Fathers)

« Barthassade » refers to the thick wood that borders the plots of the Clos. Signed by this name, their cuvées are great expressions of freshness and gourmetness, a Southern style while round and subtle!

Wines that are increasingly popular with restaurateurs because their drinkability is impressive for both gourmet and delicate materials.

Name: Languedoc = Herault Country Wine > Larzac Terraces

Duo all terrain, the couple formed by Hélène and Guillaume produced their first vintage in 2014 in this personal project which now extends over 13.25 hectares.

Their wines are now on the tables of the great stars.

Organic farming and certain tasks are rhythmic by the biodynamic calendar. The Clos de la Barthassade extends over 11 hectares of vines currently

Area : domaine des Boissières (founded in 2017)

Name: Marcillac

Marc Fraysse is a young winemaker who took over the two hectares of vines planted by his great grandfather. After bulging to Australia, he is now installed in his native Aveyron on a field worked in biodynamics. No input

Grape(s): 100% Fer Servadou (also called Le Mansois) belongs to the family Cabernets

Cuvée: Lias

Vintage: 2022

Description : What finesse! Fruit, spices, mint freshness. It's an absolute crush. It is complex and elegant at the same time.

Lias is a small selection of mansois about 60 years old planted on limestone soil. Farming lasts 12 months in half-maids.

Nose : Black fruit, spices, mint. Mineral tram.

Tasting : Of purity in mouth, silky matter, velvety, caresses the palate. It is fresh and gourmet at the same time, with a salivating finish.

Food & Wine Agreement : fine, complex, elegant. On a simmered dish, a tender meat, why not duck
