The tasting sheets of the Soenologist
Wine #1: A festive bubble to start with, and an obvious link to music
Area Julien Chopin (south of Epernay). Brand created in 1947 (3rd generation)
Name: Champagne
Terror : Soils are composed of limestone and chalk
Grape(s): 100% Chardonnay (vines classified in 1st Cru)
Cuvée: The Originals
Vintage: 2014
Service: 8-10°
Carafage: 30 min
Dosage 6.5 grams per litre
Age on lees about 9 years old
Description : Richness, charm and elegance
Dress : strong yellow
Nose : The nose evokes the wet chalk, the flower of acacia and some lemon zests. It evolves at aeration towards scents of honey and chestnut, mixed with notes of green and iodized apple.
I also feel stone fruits (mirabelle, brugnon) + spicy and toasted notes.
Mouth : Soft and fresh with creamy and melted effervescence
Music & Wine Agreement : Festive / Sparkling / Effervescent
Wine #2: an iron hand in a velvet glove!
Area : Guilhem Barré
Super winemaker who has been cultivating his 5 ha of vines since 2008 at the foot of the first foothills of the Black Mountain
Name: Cabardès (at the gates of Carcassonne)
Terror : argilo-calcaria
Grape(s): 80% Merlot / 20% Syrah
Cuvée: Under the Wood
Vintage: 2020
Service: 16°
Carafage: 2H before
Alcohol: 13°
Description : deep respect for the living + respect for the land
A Cabardès who clearly affirms his Southern character with a juicy tension: an iron hand in a velvet glove!
Dress : Beautiful garnet dress supported with purple reflections
Nose : Very ripe black fruits and spicy notes. Nature is present, but not exuberant.
Mouth : The attack in the mouth is powerful, on a beautiful structure and reveals notes of very ripe fruit. But a miracle of balance, the whole keeps a remarkable freshness and vivacity, thanks to this beautiful acidity.
Music & Wine Agreement : Depth / Sun / Conviviality / Respect for tradition
N°3 : A great wine of meditation to finish smoothly
Area : Vial-Magneres (name legend field)
Bernard Saperas, an icon of this vineyard that has made Banyuls known worldwide. Left too early, in 2013, he left behind a masterful work!
Reprised by Laurent Dal Zovo, elected winemaker of the year 2021 by the Hachette Guide.
Name: Banyuls
Terror : Schistes. Planting in terraces, driving cup. Mediterranean climate, warm and dry summer, mild winter. Very windy, the Tramontane is almost daily.
Marine entry = natural mist
Grape(s): 70% Grenache Black / 30% Grenache Grey
Cuvée: Gaby Vial
Service: between 10-12°
Carafage: 2H
Alcohol: 16.45% / 80gr residual sugar
Description More commonly called 7 years of age, this Banyuls is more oxidative than traditional Banyuls.
Banyuls are so-called wines « transferred » : i.e. alcohol is added to the must to stop alcoholic fermentation, which helps to keep some of the natural sugar in the grape.
This one is aged in oak (reddening medium) to give a typical oxidative banyuls!
Description: An intense pleasure around the combo: macerated cherry, fig, cocoa
Dress : Tiled, amber red
Nose : We have the fruitiness of Grenache + fig, a little nutty. Nose of candied red fruits, mainly macerated cherry, some coffee and chocolate/cacao. Caramel.
Mouth : Unctuous, but digested at once – The mouth is tender, supple, greedy and slightly oxidative
Music & Wine Agreement : From Past to Present / Meditation Wine / Power / Sun
