Wine #1 : A beautiful festive bubble to sharpen our palates

Name: Champagne – Grand Cru – At the heart of Avize, on the mythical Côte des Blancs

The most prestigious and known region in the world. They managed to make it a mark. When you have a moment, one thing to celebrate: you go to Champagne!

Area : Fallet-Gourron

Terror : Coteaux exposed south-east, with limestone soil. They are old vines: 50 years on average, 80 years for the oldest.

Grape(s): 100% Chardonnay (White White)

Cuvée: Grand Cru – Extra Brut

Vintage: 1/3 of 2015 (exceptional vintage) and 2/3 of 2016 (large vintage)

Service: 10° / no carafing

Description : A real champagne winemaker! The minerality brought by the limestone soil gives the freshness necessary to balance the wine.

Dress : Golden yellow – visible evolution

Nose : The nose is complex, it is marked by toasted scents of brioche bread. The aeration also produces notes of very ripe yellow fruits (pear, caramelized apple), flowers and dianis.

Mouth : The attack is creamy, very tasty. On the palate, the foam is creamy, thin and dense. The body is astonished and full while remaining fresh and lively. The finish on the hazelnut is a superb length.

Music & Wine Agreement : A sparkling and quiet piece at once. Invitation to the party. Illustrating the effervescence in music!

Area : D-Ourea (Adrien Roustan)

Name: Gigondas

Terror : Parcel selection of altitude, 0.25 hectare located at 520 meters, on the southern slope of the Dentelles de Montmirail, place said « Grand Montmirail ». It is a unique place surrounded by green oaks and limestone with a cool, ventilated and bright climate. The vines were planted in 2019.

Manual harvest, white wine of maceration (short) raised in clay amphora.

Grape(s): Clear white and pink

Cuvée: Beautiful Cime

Vintage: 2023

Description : Wine in a coppery dress with notes of honey and bark of citrus slightly preserved. It's very original as an approach! Risk taking of the winemaker.

Mineral and energetic wine where limestone prints the texture of the wine.

Traditional Gigondas antithesis with rare energy and limestone density. A wine that will be on fineness and balance. Or an aerial side!

Dress : copper / gold

Nose : At first sight, we are on a maceration white. There is a beautiful material, very fine bitters in the middle of the mouth. It's very expressive!

Mouth : The mouth is also surprising, there is a lot of minerality, freshness. It's tense, without exuberance. A wine that marks the spirits!

Music & Wine Agreement : To go with originality and the mysterious side of this wine, an unexpected piece, full of various influences (rock & jazz). A little like this wine, which is not conventional

Wine #3 : An iron hand in a velvet glove

Name: Barolo (Piedmont)

A noble and renowned region, Piedmont offers iconic wines such as the famous Barolo and Barbaresco. The Nebbiolo grape variety expresses all its complexity and refinement and fascinates amateurs around the world!

Terror : beautiful hills, some of which are classified at UNESCO

Soil of limestone marnes rather compact, fresher and fertile, giving relatively fine, fruity, aromatic wines

Area : Germano Angelo

Grape(s): 100% Nebbiolo Cuvée: Trevigneti Vintage: 2018

Service: 16° Carafage: 2H Alcohol: 14,5%

Description : Fruity, floral and spicy wine as it should, and more prominent tannins.

Dress : Pale, orange colour.

Nose : Nice typical notes of flowers, camphor (cardamom), citrus zest, crushed strawberries, black pencil size.

Mouth : Medium intensity for this elegant wine, fragrant, full-bodied, with a tannic background that remains discreet and controlled.

Wine 4 : A wine of meditation, journey through time

Field: Seppi Landmann (8.5 ha)

A figure of Alsatian winemaking, Seppi Landmann managed to develop a vineyard of eight hectares of vines, but also and above all to build a reputation of quality among the wines of Alsace.

Name: AOC Alsace – Zinnkoepfle GC (one of the largest terroirs)

Terror : Argilo-calcary, altitude, the highest terroir of the appellation

Grape(s): 100% Riesling (40 year olds)

Cuvée: Zinnkoepfle GC (means « sunhead » southern orientation) – Tardive harvests

Vintage: 2001

Carafage: not to be used directly at the time of opening

Alcohol: 12%

Description : Unique moment, how lucky to be able to taste such an old vintage. Last bottles in circulation. Wine is a time machine!

Tasting old wines deserves a form of cultivation, it is an unacquired taste that requires experience. This makes it possible to understand a terroir, a history. Unfortunately this habit is lost, there is almost no one who offers this type of bottle. I fear that the younger generations will no longer understand these wines that build the history of a region of a terroir.

Today we are looking for primary and more physical than spiritual sensations.

Nose : Still fresh and expressive. Honey/basil and candied apricots + mushrooms

Mouth : Round but acidic, soft and smoky, nice length, salivating, leaves a nice sensation in the mouth. A well integrated sugar
