Next to me, a quartet of orchestra musicians put these wines into music. Cherry on the cake, chef Séverine Sagnet has concocted an additional agreement!

Musical chords by a quartet of the Avignon orchestra

Driven by a wine-loving cellist, I had fun finding the right musical chords for each wine. Mozart will go with the sparkling side of Champagne, we will study the different musical terroirs, and an end in fireworks with Carmen.

Area : Julien Chopin (south of Epernay)

Name: Champagne

Terror : Soils composed of limestone and chalk

Grape(s): 100% Chardonnay (vines classified in 1st Cru)

Description : richness, charm and elegance

Dress : light yellow supported

Nose : The nose evokes the wet chalk, the flower of acacia and some lemon zests. It evolves at aeration towards twigs and cloves, mixed with green and iodized apple notes.

Kernel fruits (mirabelle, brugnon, apricot), white flowers and a hint of honey to coat the whole. Spicy notes

Mouth : Soft and fresh with creamy and melted effervescence

Emmanuel Reynaud (owner of the famous and iconic Château Rayas)

A discreet and passionate man, and without a doubt an atypical character!

Terror : sandy soil, offers at all ages an incredible fineness wine

Description : The rosé of the castle of the Towers of Emmanuel Reynaud (Rayas) is simply a pure gourmet, which deploys a fruit bomb (crashed) With a glycerinate mouth, it is rich, with a beautiful volume, a sweet side. A truly unique rosé!

Dress : Rose

Nose Nose of great depth, on notes of crushed strawberry, faded rose, bitter orange, blood orange. A finely spicy side.

Mouth : The glycerinate mouth is flexible, suave and highly accurate. It is winey, tannins are silky, almost imperceptible, there is a lot of material. The undisputed master's leg Reynaud!

Area : Matthieu Barret – Domaine du Coulet (20 ha of vines in the coast on granite soils). among the most beautiful references of the prestigious Cornas appellation

A winemaker who bears his name, completely barred, but with great rigor!

Terror : granite soil at 320 meters altitude. 65-year-old vineyards

Grape(s): 100% Syrah

Cuvée: Black Bills (a plot, Les Bois, 350m altitude, south, Mathieu's grandfather, the bays are very small and very black, hence the name of the cuvée)

Vintage: 2021 – bcp of rain therefore freshness

Alcohol: 12.5% / 24 months of breeding + 1 year in bottle

Description : A dried wine. Deep, but not too rich. Fine and aerial. Beautiful expression of the terroir!

Dress : glossy ruby dress

Nose : aromatic on black olive, smoked and Sichuan, tapenade, violet

Mouth : Silky tannic texture, fine mouth on freshness and minerality. Complex wine, fine and very fresh, a lot of freshness ( vintage 2021)

Grape(s): 80% Grenache Noir, 10% Syrah, 6% Mourvèdre and 4% other grape varieties (Cinsault, Counoise, Vaccarese, Terret Noir, Picpoul Noir and Muscardin)

Cuvée: Châteauneuf-du-Pape

Vintage: 2007

2007 at Châteauneuf was a dry summer without being warm, significantly more windy than normal which allowed a great natural concentration of the berries

Description : We're going to show that Châteauneuf produces great watch wines!

About this vintage in the Rhône Valley, Robert Parker had not hesitated to call it a « once in a lifetime vintage », one of those vintages that you only meet once in your life... Sorry about that!

Dress : Tiled, evolved

Nose : On the tertiary (animal, leather, blood, undergrowth) – preserved fruity, rich sensory millefoule (mûre, humus, spices, fresh leather, incense, tomato powder, truffle tip). Garrigue notes.

Mouth : Surprise – an admirable tannin melt. We'd almost want to wait 5-7 years longer, to know where he can go, but it's already too good (and affordable)!

Founded in the 13th century by Cistercian monks, the Domaine des Bernardins is a real historical gem. It has been carefully restored and today offers an exceptional setting for wine lovers and visitors looking for cultural discoveries.

Cuvée: Muscat de Beaumes-de-Venise

This muscat of Beaumes-de-Venise delivers with a rather oriental aromatic, assembling notes of loukum and rose water.

Dress : A wine that attracts attention by its copper pink dress, offering a visually appealing look. Amber limit

Nose : Aromatic that evokes fig and muscat grapes. The nose is delicious finesse while on the palate the scents of rose and loukum take place in a generous length.

Tasting : In the mouth, it has a powerful and balanced attack, which reveals predominant notes of white fruit. It's sweet, balanced, well melted sugars.
