Established since 1729, Ruinart is the oldest house in Champagne.
Name: Champagne
The most prestigious and known region in the world. When you have a moment, one thing to celebrate in life: you go to Champagne!
Tribute:
Frédéric Panaïotis, the cellar manager for over 18 years, died suddenly during a diving accident. He was 61 years old. A unique personality, both extremely rational and deeply sensitive. He led the house to excellence.
Wine is the living memory of our past.

Nose : Winey, chalky, brioche. The first nose reveals intense toasted aromas, evoking notes of dried fruit enhanced with pastry shades. The second nose offers citrus and exotic fruit fragrances, mixed with delicately smoked floral and mineral scents.

Paganini's virtuosity will highlight the chiseled acidity of the wine, and its lively side! Moreover, these are Variations, which will allow us to play also on the notion of reserve wine.
Wine #2: The most beautiful way to express minerality in wine
Area : Didier Dagueneau (died 2008 in an accident of ULM) – domain taken over by his son Louis-Benjamin (vigneron of the year in 2016 by RVF)
- one of the pioneers of the grapevinification (a lover of Burgundy)
- look baba, but in his work Didier was opposite to the relaxation
Name: Loire Valley (sometimes classified as Wine of France because angry with the name Pouilly-Fumé)
Terror : Sols of flint, hence the name of the cuvée!
The vines are located on the top of the hill of St-Andelain. Terroir of hard clay and large sharp flint giving a more complex wine.
Anecdote: 1 person per hectare (area 12 Ha)

Description : Silex no longer presents himself because he is part of the pantheon of the great white wines of the world. It's one of the best savers in the world! A collection bottle
- Both Baroque and Cistercian
- Perhaps it is with this wine that one really understands what the notion of minerality in wine is. No scientific consensus on this concept! But one can try to vulgarize: acidity (calcareous soil, vivacity, freshness).
Dress : pale crystalline yellow, dotted with silvery reflections
Nose : Beautiful and very complex. Watermelon and grapefruit aromas. Notes of fruits of the orchard, citrus zest // minerality (gun stone), raised with freshness of eucalyptus and mint. Root notes, vegetal, but noble. A mix between citrus fruits (Pampemousse rose) and exotic fruits.
Mouth Crystalline. Purity! the tension is maximum, sharp acidity. The balances are there, and there is a lot of matter. This acidity is refreshing. Citrus flavours blend harmoniously with exotic fruits, while salivating minerality persists in the finish, accompanied by a hint of noble bitterness and smoky. Nice persistence!

Terror : The soil is clay-calcar with white marnes
Grape(s): 100% Pinot Noir
Cuvée: 1st Cru – Ruchots (indicates a place that contains rocks)

Description : We'll look for finesse, subtlety. Address the notion of musical terroir.
Dress : Dense rub
Nose : Very elegant, on cherry, raspberry. Light leather, we get into the tertiary.
Mouth : We find the elegance of the black pinot, the tannins are silky, beautiful persistence.
Music & Wine Agreement : We're attacking a monument, but we're going to look for finesse, subtlety. Address the notion of musical terroir that is the key in Burgundy. Each plot gives a unique Pinot Noir. Illustrate elegance!

Wine 4 : We go up a step, understand the difference with a big cru
Area : Lambrays domain (register Boris Champy)
A place unique to the world that adjoins the Clos de Tart and has produced for centuries, inimitable and upsetting reds.
Name: Clos des Lambrays (Morey-Saint-Denis) located in the heart of the Côte de Nuits
Terror : 8.52 hectares // the inverted fence southward, which offers an infinity of microclimates and exposure. The very thin soil, poor, limestone in altitude and clay down, allows the production of a silky wine.
Grape(s): 100% Pinot Noir
Cuvée: Clos des Lambrays – Grand Cru
Vintage: 2017 (vinified by Thierry Brouin)

Description : For lovers of wine and large terroirs, Clos des Lambrays is majestic, a wine inimitable to the enchanting floral. A striking finesse and flexibility
A wise blend of a large Clos Vougeot for strength and a Latricières Chambertin for fineness and aromatic extension.
Dress : Deep ruby dress
Nose : Very seductive, bewitching, feminine. The notes of blackberry and blueberry that evolve over time on the truffle and undergrowth. We also have some leather on the "sanguin" side of the wine. A great complexity.
Mouth : Powder tannins, a phenomenal length. The wine is powerful, dry, long, wide, mineral tip, infinitely intense. It is a large bottle in perspective that begins to open and will defy time.
Music & Wine Agreement : Here we will play on the contrast with the first cru. This will be the major work of the programme. Qqch of very dense, powerful, bewitching, but still in finesse, balance and subtlety.
Barrios – La Catedral, three movements (7)
A journey that settles in finesse. Seven-minute room, more consistent. Pretty magical piece, in the spirit of this wine. Evolution in the glass, bcp of things to tell.

Dress : Dense, almost black
Nose : notes of smoked (characteristic of the cuvée), havane, roasted coffee beans. Several tasters smelled chocolate, moka.
Mouth : The wine is long, creamy, wide, powerful and fresh. What is amazing with this wine is that despite its age, it gives the sensation of great freshness. A form of youth. Also, very nice length.
Music & Wine Agreement : We're going to change the universe, while staying at the previous coin/wine level. We stay on power, on evolution. As it is an old vintage, playing Bach to evoke the timeless side of wine and music. Thibaut evokes the notion of "classical" which applies to both Wine and Music!

Name: 1st Cru Ranked Superior – Great vibration in this name
Terror : mix of clay, gravel and limestone, with a very special microclimate.
The castle's encépagement is distributed between 75% of semillon and 25% of sauvignon blanc
Grape(s): 80% Semillon and 20% Sauvignon
Vintage: 2009 – warm but not excessive temperatures. An optimal maturation and evolution of the grapes.

Description : We're on freshness, on finesse. It's agricultural goldsmithy!
This wine evokes Kashmir: elegance that fits in with the duration, which is in my opinion what makes a great wine
Dress : Golden yellow, pulling on amber
Nose : Aromas of exotic fruits, maracujas, mango, pineapple. Citrus, lemon, yuzu. Really a great complexity
Mouth : The texture is silky, smooth and light at the same time, the perfect sugar-acidity balance. The aromatic persistence is exceptional, endless...
