Great improviser, composer and arranger, it is with a lot of intuition that Paul LAY has proposed perfect musical chords! A musical and oenological ballad, in search of maritime influence in wine and music!

The method Charmat, also known as closed tank method, implies a second fermentation of the wine which does not take place in bottle but in barrels (inox). Sugar and yeast are added to this tank. During this second fermentation, carbon dioxide is created that cannot escape and dissolve in wine. The famous Proseccos are also developed in this way.

Cuvée: Feet on Earth
Vintage: 2023
Service: 10°
Carafage: 2H
Alcohol: 12%
Description ‘The feet on Earth' is a cuvée by François Ménard, the last son.
This cuvée, François I, wanted to be faithful to his inspirations: fresh, fruity but intended to accompany dishes. The nose is impressive, lively and enchanting. The mouth is fresh and lively with a beautiful acidity. The end of the mouth is tannic, which is surprising for a white of this region, but is explained by the presence of seeds 24 hours during maceration. A great success, the fruit of a great technicality!
Dress : Golden yellow
Nose : Complex, with notes on the apricot and the nuts. Short maceration.
Mouth : large, rich, powerful. A slight minerality and one Iodized freshness recall the maritime influence of the terroir. The final is long and salinewith a slight astringence Surprising for a white, due to the presence of the seeds during the leaf maceration
Music & Wine Agreement : Typical, near terroir, yet different identity / salinity / bitterness / exoticism
Wine 4 : To avoid jealousy, after Sardinia, Corsica
Area : Alzipratu – located between Calvi and Calenzana, in Upper Corsica. The name « Alzipratu » means « up close », reflecting the geographical location of the domain between sea and mountain.
Anecdote: Founded in 1960 by the Baron Henri-Louis de La Grange (musicologist)
Name: AOP Corsican wine Calvi
Terror : Schist and granite – Mediterranean climate with maritime and mountainous influence
Grape(s): Assembly: Niellucciu (60%), Grenache (20%), Syrah (20%)
