Musical chords by jazz pianist Marek Kastelnik
We let ourselves be guided by the new master on board, Marek Kastelnik, whom I thank again for playing the game and with whom we will go up the river downstream upstream. Different musical inspirations, personal compositions, improvisations. Exploration of musical textures.

The tasting sheets of the Soenologist
The Tannic Accord of the evening? The old Vouvray of 1959, great year in the Loire, exceptional and infinitely rare bottle. What about the music? A very personal interpretation of Bach's Goldberg variations. Timeless!
Wine #1 – Domaine Jean-Baptiste Hardy
The Muscadet is in the midst of a shimmer and sees the emergence of talented young winemakers who develop bottles filled with grace, tension and extension. Jean-Baptiste Hardy belongs to this vein there and there is a lot to bet that this young winemaker will become one of the pertussis of the appellation.
A terroir that benefits from the nearby ocean breeze.
- Field: Domaine Jean-Baptiste Hardy
- Name: Muscadet
- Grape: 100% Burgundy Melon
- Description : This cuvée comes from ancient Melon B selections, planted in 1960, in Mouzillon, on silt soil and gabbro basement. The wine is raised 12 months on fine lees, in barrels of 450L of 1968. The result is superb with a white of great purity, chiselled at will and a great persistence.
- Tasting : Acidity / Tension / Minerality / Salinity / Citrons / Citrons / Flowers / Oyster shells
- Food & Wine Agreement : This Muscadet can be tasted with delight, accompanied by seafood, crustaceans and fish in sauce, or a well refined county.

- Area : Eric Morgat
- Name: Savennières (Sol of shales and volcanic stones)
- Grape(s): 100% White Chenin
- Cuvée: L
- Vintage: 2007
- Description : This Savennières is decorated with a beautiful yellow dress pulling towards gold as it evolves. It exhales delicate and varied notes of white flowers, citrus fruit, white flesh fruits and quince. These same flavors are found in the palate, balanced with great minerality. Equipped with a nice fat, it presents the body necessary to be kept in the cellar for a few years and be accompanied by dishes of character.
- Nose : Fine nose of vanilla, apple and quince, peach and white flowers. Mandarin
- Tasting : In the palate, the style is modern, well built, with a wood still a little too present. Enough retained in the state, it seems rather wider after prolonged carafing. The finish is pretty firm.
- Food & Wine Agreement : river fish, white meat, asparagus...

- Description : A purple ruby dress for this Chinon Tradition that advances a rich and complex aromatic palette, well defined, on beautiful aromas of ripe fruit. The palate is balanced, reflecting a subtle tip of aromas from the serious, in a rather tannic profile...
- Nose : On the black fruit, well ripe, some notes of evolution.
- Tasting : Silky tannins, well balanced. Drink now!
- Food & Wine Agreement : Reserve on a red meat!
Wine #5 – Domaine Clovis Lefèvre : THE WINE OF SOIRE
- Area : Clovis Lefèvre
- Name: Vouvray
Confidential domain of the Loire valley, the Clovis Lefèvre estate signs wines of very great guards, attest to this our exciting tastings of old vintages that he signed with passion. Located upstream of Tours, north of the Loire, the vineyards of Vouvray are planted on clay-calcareous or clay-silicose soils covering the chalk « tuffeau ». Production is divided between quiet wines (dry, semi-dry or mellow according to the years and, above all, sunshine) and sparkling wines, which are produced according to the traditional method of second fermentation in bottle. Sweet wines bearing the mention « soft » on the label are produced when the climatic conditions are favourable (sunset autumns). The overripe grapes, affected by noble rot, are harvested by sorting. These rich and sweet wines acquire with age the complex aromas of high liquorous wines: ripe quince, acacia, almond and honey. Their guard capacity can reach a century. - Grape(s): 100% Chenin
- Vintage: 1959 (great year in the Loire)
- Description : After many years of watch, Clovis Lefèvre's dry vouvray presents a beautiful gold dress that slightly resembles that of a liquorous wine. After a bit of ventilation, it seduces with its notes of exotic fruits, quince and truffle. Extremely complex, it savors with gourmet dishes.
- Nose : Exotic fruits, quince and truffle flavours
- Tasting : Complex, gastronomic, melted sugar, almost mellow
